A very Happy New Year to you all! I hope that you had the party that I had, but that you skipped the hangover that nearly felled me once and for all yesterday!

And what a year it has been, with weddings, parties, anniversaries, and significant birthdays. It all culminated for me with a new job, and throwing a retirement party and 65th birthday party for my Dad, whose birthday was on New Year’s Eve. I cooked a load of things for that, including more tarted up mince pies and many other things, including some gluten free bits; some of which will appear here soon.

I thought that I would start 2013 with a bit of reflection on what I got up to, with a look back on last year’s resolutions, and to make a few more for the coming year. I’d also love to hear yours, if you want to leave them in the comments.

Viva Varvea! Permaculture in Practice

Last year, I resolved to go on a permaculture course, and get better at growing food. I had a lovely 10 days in Portugal, with a great bunch of people where I learned about permaculture design. I have since volunteered in a permaculture garden at home, and it has made me a more knowledgeable gardener. I put some of the theory into action in my own garden, mostly with a lot of companion planting, and I hope to blog a bit more about that for this year’s plants.

I also joined the 52 week salad challenge run by Michelle at veg plotting, and started Seedy Penpals  with Carl. All of these things have made me better at successional sowing, and growing in general. I have been exposed to a lot of new plants and new varieties this year, and I’ve met some brilliant people. Although I still haven’t met many of them in person, I have come to look on some as friends, through here and on Twitter.

I Found the Story, and It’s Inedible

I had to visit Japan for work once, and the dashis and ramen that I ate there often contained a pretty and pungent leaf vegetable that the English translation often listed as Morning Glory. I decided to track it down to try and grow it for myself. I was given a packet, and was disappointed that they are, in fact, not edible. It turns out that the little leaf I had eaten so often was actually shiso. Luckily, I’d also got hold of both the red and green varieties, and have been enjoying it in salads all summer.

I resolved to investigate more Asian and Middle Eastern food. I have eaten a lot more than in previous years; including pho, Hom Bao, a Lebanese –Inspired Chickpea dish, and have some Persian flavours in some blog posts that will follow. However, I probably could have done better.

Salad as Staple

Something else that I have done as a result of a resolution made last year is bake bread, although not as regularly as I’d hoped. Much of it has been fairly standard, so I have not blogged about it. I did manage to make some nice sprouted chickpea bread, and some hot cross buns, as well as the Hom Bao, which count as a bread, because you make a dough that needs proving.

I had hoped to do some butchery. I didn’t quite manage a whole beast, as I’d hoped, but I have deboned and jointed birds, and a rabbit or two. I have some of the adventures in photos ready to type up, but have been putting it off, because I know quite a few vegans and vegetarians follow my blog and I don’t wish to alienate or upset any of you. I may go ahead with these posts, but make most of it only visible if you click through to the whole post, then you don’t have to see the photos if you don’t want to. I’d be grateful if you are not a meat eater if you could let me know if this would suit you.

I have brewed many things, from blackberry wine and liqueur, elderflower champagne, elderberry wine (which I have great hopes for, this batch is still not ready but preliminary tests have proved promising) up to flavoured spirits from foraged goods. For reasons that I am not really sure of, I have not blogged any of the brewing. Maybe I will just get on and do so; I would like to share them.

Finally, I had a long list of places that I would like to visit. 2012 was not really the year of fine dining, so I didn’t make it to any of those on my shortlist. Ah well, there will always be exciting new and good restaurants to eat at.

And so we come to the year ahead. I have had a lot of fun making the resolutions, and stuck to a surprising number of them, even if I didn’t achieve as much as I’d hoped. So for this year, I have another list that I think is pretty ambitious, but will be fun to try and achieve.

Again, in no particular order, for 2013 I would like to:

  1. Grow unusual vegetables and fruits – especially a lot more perennials.
  2. I’m going to blog more boozy posts. I am going to make nettle beer this year, to see how that goes. I’ve also found wild hops this year, so maybe a beer from scratch could be on the cards?
  3. I want to learn how to smoke food. I’ll have to get hold of a stove top smoker (or a wok with a better lid than the one that I have), and hopefully start experimenting with smoke. My neighbour has a larger smoker in his shed, so maybe I’ll be able to work my way up to smoking with him – although I expect that will take much more than a year.
  4. I want to experiment with cheese. I’ve made soft curd cheeses, but I am just curious about the process and what could be possible in small batches, and without anything in the way of specialised equipment.
  5. I have developed a bit of an obsession with Bath Chaps. It will probably be a challenge to source a well reared pig’s head, but I’m going to give it a good try, then I’m going to attempt a brine, and we’ll see where it goes.
  6. Given my new job I’m going to have a go at some Filipino food, although maybe not some of the most adventurous dishes.
  7. Finally, I’m going to say that I intend to eat out more this year than last, and revisit the resolve to eat at some fantastic restaurants across Europe. I’m not going to list them this year, but if I do get the chance to eat at some, I am going to blog about them.

So let’s see how far I get this time.

Acceptable Ways With Sprouts

From Bleurgh to Bogies

“What’s the difference between Brussels sprouts and bogies?”, goes the old joke, (You can’t get kids to eat Brussels sprouts!), and for many years these particular little green balls have divided households, especially during the festive season.

In my house, tradition called for sprouts on the plate, even if the kids left them there. Every other year it was the subject of a running battle between  my grandmother and me. As a small child, I would absolutely refuse to eat them; boiled, as they were back then, with the mystifying cross cut in the base. A bit like I do now, my Gran abhorred food waste, and loathed the fact that the sprouts would sit, untouched, on my plate. Unlike me, Gran did not do creative things with leftovers. She would threaten to give me those emerald cannon balls for the next meal, and the next, thinking that I would capitulate at some point and eat them. I was made of much stubboner stuff, and we would grumble and mutter at each other, while the sprouts festered somewhere (usually in the dog).

Nowadays, boiling sprouts is no longer compulsory. I am still not going to plant these in favour of kale, cavalo nero, or purple sprouting broccoli; but if I am presented with a stalk, I will no longer stamp my feet and dig in my heels in a resolve not to get them down my gullet more steadfast than that shown by Gandalf when he faced down the Balrog.

Instead, I have learned that sprouts are better if they see minimal water during the cooking process, and that they should definitely never be allowed to boil in water for any length of time. Indeed, unless you are making a soup of leftovers (of which more later), it is probably best to keep them out of water altogether, after they’ve been washed.

Sprouts are actually delicious, delicate and tender when eaten raw, so they make lovely salads and coleslaws. I think I got this from Nigel Slater, but pomegranate and sprouts are a lovely match in a salad. The sprout tops are also great for this, as they are tender and not as powerful as their smaller, tighter offspring down the stalk.

Cooking them in fat – bacon fat or duck fat is always a winner. I have done a sort of confit with halved sprouts cooked slowly in duck fat, and plenty of  thyme, which is pretty good, but not for those looking after their cholesterol.

I also like covering halved sprouts with a cartouche and letting them steam in a cm or so of stock in the bottom of a pan, until the liquid is absorbed. Again, meat stock is better, I often use chicken or ham stock, but vegetable stock is also good for this, if you are a vegetarian. This will take about 5-10 minutes on a medium heat, providing the stock is at simmering point when you add it to the sprouts.

The recipe that I’m about to share is an obvious combination, but  it works so well. And you can make a great soup with the leftovers (which I’ll be sharing here soon).

I hope that you have a go with some of these ways to eat Brussels Sprouts. I hope that together we can banish emerald green christmas bombs forever and move towards many more acceptable ways. The only question is, how do you eat yours?

Stir Fried Sprouts

Recipe: Stir Fried Sprouts

Ingredients

10 sweet chestnuts

100 g streaky bacon cut into lardons

400 g Brussels sprouts

A splash of water

Method

If you are using fresh chestnuts, then you will need to peel them, and take off the hairy coating. This is the best method that I have found for peeling them. Once they are peeled, chop them roughly.

In a large frying pan, gently fry the bacon on a low heat, to render off some of the fat, and until the lardons are crispy. Remove to a piece of kitchen towel. Unless your bacon has given off more fat than a duck might, try to retain as much of the fat as you can.

Meanwhile, halve the sprouts, then shred them thinly.

Fry off the chopped chestnuts, until they start to brown. Add the shredded sprouts, and stir until the green brightens a little. Do not let them catch, burnt cabbage is not pleasant. Add a splash of water, and allow it to steam off.

Return the bacon to the pan, and mix well. Serve immediately with a big roast. This year we had a gammon. Don’t worry about the leftovers; soup is always a post Christmas winner.

Merry Christmas and Tarted Up Mince Pies

Well, It’s been a long time since I fired up the old blog. I haven’t gone away, but things have changed a little. Not least, WordPress have been messing about with the software, and the photos upload differently, so sorry if they look a little bit weird, until I can get used to the new  way.

Anyway, since I posted last I had a bit of computer trouble, so I know that I may owe a few of you e-mails, and I have some catching up to do for Seedy Penpals.

I also have a little news, that is probably exciting for me, and not for many others, but I’m going to tell you anyway. After a lot of deliberation, I decided to take a role as the Campaign Manager for the Land of Promise Campaign to get better working conditions and the use of fewer pesticides in the pineapple industry in the Philippines, and three weeks ago I signed a contract with Fairfood International. I am excited because it is combining my skills of campaigning, and food, and I’m helping Fairfood plan and deliver a new campaigning strategy.

I have dived right in, with planning for the campaign, which has taken all of my head space, but now I have done the background reading, I am hoping to get back to blogging regularly. It does mean that I need to settle into a different posting pattern, but for the time being I have a bit of a backlog of posts to catch up with, which I’ll schedule in the coming days and weeks.

But that’s enough about me. I am with my family, and have just finished the preparations for tomorrow’s food. I have also managed to squeeze in some jam making. I haven’t had as much time this year as I normally would to make all the preserves ready for Christmas, so I haven’t made my own mincemeat. The mincemeat that I picked up on Saturday is at the more mediocre end of the spectrum, and I am not one to compromise on quality that much, so I thought that I would also share my tarted up mincemeat recipe.

And of course, I wanted to wish you all a very merry Christmas, Great Yuletide, and a Happy Winter Solstice, whichever you celebrate.

Tarted up!

Recipe: Tarted Up Mincemeat

Ingredients

50 g dried fruit, I used a mix of cranberries, raisins and golden sultanas

Port to cover the fruit

1 jar mincemeat

Zest of a lemon

50 g of almonds and hazelnuts, chopped

Sweet shortcrust pastry I added lemon zest to this

Milk or egg wash

Method

Soak the dried fruit in the port until the fruit is plump. This will take at least an hour. Stir in the mincemeat, and lemon zest, and allow to soak together with the fruit.

If you are making your own pastry, make it now using the method here. Wrap it up and let it rest in the fridge for about an hour.

Tarted up mincemeat

Mincemeat Plus

Add the chopped nuts to the mincemeat just before rolling out your pastry. By using shop bought mincemeat, you are taking advantage of the pulped fruit (usually apple) and the spices. Normally mincemeat has to mature for at least a month before use, so this is a shortcut to tasty, fruity mincepies, without compromising on flavour.

Heat the oven to 160°C.

Roll out your pastry to about 3mm thick. Use two cutter sizes, one slightly larger for the base, cut an even number of bases and tops. Grease some tart tins. Cover with the bases, then press down gently with some dough offcuts.

Add a heaped tsp of the mincemeat to each base.

Brush the rim of one side of the top with milk or egg wash, cover the tart, wash side down, and either crimp or press gently with a shot glass to seal the pie.

Brush the pies with more milk or egg wash. Put in the oven for about 15 minutes, or until they are golden brown.

Serve them to your friends and guests and no-one will tell that you cheated a little bit.

Well, what a week it’s been. I have been busy with a lot of networking, about which I hope to be able to bring you more later. Today, I am on my way to the Food Guerrilla event in Rotterdam, which I

The week started (or last week ended, depending on your viewpoint) with the Seedy Penpals, Cityplot and Mediamatic Zaadruilen (Seed exchange) on Sunday. The day started out bright and crisp, a great day for a seed swap. We headed over to the Mediamatic Fabriek with bags full of seeds, and the hope that there would be enough variety to share.

Unfortunately for us, the heavens opened just before 2.00, when the swap was due to start. Although I was inside, and couldn’t see out, I knew from the sound that it was raining cats, dogs, and probably a few farm animals as well. I am sure that this put many people off, as the mediamatic events are usually very well attended. Nevertheless, quite a few intrepid people did make it, and brought a lot of seed to boot. It was great to make connections wit more people who want to grow and share seed, and to find out about all the initiatives that there are in town, or that people want to get off the ground.

ASEED were also there. They brought seeds, and they also gave a workshop on seed saving, and the importance of maintaining plant varieties that are being lost as we see more and more of our plants (particularly food) being grown from fewer varieties that are bred to look good or last well on our supermarket shelves, or be resistant to pesticides etc.

This issue is becoming increasingly more important as we see more and more laws passed globally that try to restrict the distribution of seeds, and concentrate it in the hands of a few companies, instead of using traditional methods of saving a portion of the harvest to grow the following year. This weekend in Vienna,  a group of NGOs are getting together to discuss proposed legislation in the EU that would become even more restrictive on the sharing and saving of seeds, and the issue of owning “intellectual property” of seed varieties and genetic strains. I think that it is important to push back about this, for many reasons, and look forward to being able to do a small part in the push to amend this legislation, and make it possible to continue to grow, save and share my own seed.

People came with their own seeds, some that they had bought, but many that they had saved themselves. I took a lot of seeds, but my favourite was the runner beans that I have grown from seeds that my Dad gave me. I love to share that story, and many people were interested, and took some for themselves. I also learned a few of the stories that other people told along with their seeds too.

As we were doing the event along with Mediamatic, we also included an artistic element. We made a beautiful rangoli from pulses. A rangoli are colourful Indian artworks usually made from seeds, coloured flour, rice or sand traditionally made by Hindu women to use as decorations at festivals. I also learned that the form has been used to plot out a farm and the rotation system, so that you had a visual representation of what should be planted where, that is easy to follow, even if you may not read. I think that is a lovely idea.

Since they were edibles, we thought that we would share them with the people who came to swap seeds, so we made a Souper Seed Mix. We gave packages with beans or lentils, that we used in the rangoli, plus a spice mix. Obviously, there was no way that I was going to waste all that good seed. I figured that people could then choose to plant them, or eat them.

I tested this recipie first, using home grown Harlequin potatoes, but you could use any firm-fleshed potato. It turned out that the potato was the only seed of all of the ingredients that I used that did not appear at the swap, but I expect that this was more due to the time of year.

So, here is my Rangoli Soup. A few people from the swap have already tried this, and the reports have been good so far. It seems it id good, with or without the art!

Seeds to Form a Souper Mix

Recipe: Rangoli Soup

Ingredients:

100 g dried beans, split peas or lentils

1 tsp cumin seeds

1 tsp coriander seeds

½ tsp mustard seed

½ tsp nigella seed

1 tsp turmeric

1 tbsp tomato puree

Pinch chilli powder

1 clove garlic, grated

3cm piece root ginger, grated

1 tbsp vegetable oil

1 onion, chopped

2 bay leaves

2 sticks celery, diced

350 g potatoes, diced

2 carrots, sliced

250 g pumpkin, diced

300 ml vegetable stock

1 tin crushed tomatoes

Salt and pepper

Chopped parsley or coriander

Method:

Soak the beans in cold water overnight. If you have lentils or split peas, you skip the soaking stage. In fresh, cold water, bring the beans up to the boil and then simmer until tender. This may take between 40 minutes and an hour, depending on the type of bean. Once they are cooked, drain the water off, and set aside.

In a dry pan, toast the spice seed mix, until they brown, and the mustard seeds start to pop. Grind them to a powder.

Make a paste with the seed powder, turmeric, chilli powder, garlic, ginger and tomato purée.

Gently fry the onion,celery and bay leaves in the oil, until they are translucent.

Add the paste and cook for 2 minutes, stirring well so that the spices don’t burn.

Add the carrot, potato, pumpkin, the cooked beans,  stock and tomatoes, and cook until the vegetables are tender – about 10 minutes.

Add salt and pepper to taste.

Serve with some chopped coriander or parsley sprinkled over the top.

Seeds Just Got Real!

I am very happy to announce that Seedy Penpals is going to be live at the Mediamatic Ruilen (exchange) exhibition.

This Sunday, 4th November, I shall be there in partnership with the wonderful Cityplot crew, with a load of edible and beautiful seeds that you can grow to eat, admire, save and share.

Doors open at 2.00 pm, and you can come and swap seeds of any kind, share growing tips, and tell us your growing stories, seed folklore or something lovely about your plot, whether it is a balcony, moestuin, or a field!

Why Swap Seed?

  • We all buy fewer packets of seeds, but can grow more varieties of plants
  • Less seed is wasted if you cannot plant it all in time
  • Sharing seeds allows us to preserve more varieties, especially heritage types. Recent developments in the Dutch and international seed business have led to a concentrated market and, with it, a diminished variety of available seeds.
  • We can help create wildlife habitats at home, allowing us to benefit from the beauty of flora and fauna sharing our spaces, and allowing these plants and animals to continue to thrive.
  • Fresh food and flowers will last longer for you.

What to Exchange?

  • Seeds will be exchanged on a “bring some, take some” basis. You will need to label your seeds with the common name (e.g. runner beans, or aster) and the variety if you know it (e.g. “Scarlet Emperor” or “Ostrich Plume”). It is also important to mark whether the seeds are Open Pollinated or F1 hybrids, so that others will know if they can save the seeds and get a true plant next time. If you are unsure, then we will be there to help, just bring along the original seed packet if you can
  • You can exchange flowers or edibles, and even tubers, bulbs and plug plants if you have any (although we know it is a bit late in the year for many plugs)
  • You are also encouraged to share growing tips about the seeds – do they like shade, or full sun; do they like a lot of water, or will the Amsterdam sky provide you with all they need; when to plant them?
  • We also have the facility to share stories about your growing space, folklore about your seeds, photos of your plants (if you can bring them digitally, or e-mail them to me), so you can bring them along, or write them down on the day if you like. We will also accept stories and photos in exchange for seed, if you don’t have any spare seed.
  • We will be creating a beautiful Rangoli with a few of each ruilers’ seeds throughout the day.
  • There will also be a Souper Seed Mix available for you to take away. You get to choose if you would prefer to grow these, or cook with them

More Information

The seed swap will take place on November 4, from 14.00 to 17.00 in Mediamatic Fabriek, VOC-kade 10. You can trade free entrance for a chore like an hour of barkeeping or half an hour of vacuum cleaning. Otherwise it’s € 5,- for a membership including free entrance for a month. Children half price.

The Mediamatic Fabriek is behind the Parool building in Amsterdam Oostelijke Eilanden.

The seed swap is part of Ruilen, an exhibition, events and online marketplace from October 20 till January 6. Open from Wednesday through Sunday, from 13.00 to 18.00.

Thinking Outside the Box

Foodie Penpals Parcel October

It’s Foodie Penpals time again. This will be my last box for a little while, but I look forward to joining in again in the New Year. I will continue to look around for other people’s updates, and blog posts. I really enjoy the scheme, and getting a box of food is like a little Christmas each month. And I have “met” some lovely people too. As always, thanks to Carol Ann of Rock Salt, who organises this so well each month Europe.

This month, I was paired with two readers again. I sent a parcel to Kelly, but unfortunately her parcel seems to be languishing in the sorting office. We are trying to sort this out now, and I hope that she will soon be able to do a guest post about her parcel. As usual, I sent her a few typically Dutch items, so I hope that she likes them, when they eventually get delivered!

I received my parcel this month from Ruth. She is a busy student, so it was especially nice for her to take time out of her first week back at uni to get me some things. Ruth was thinking outside the box both in the fact that some of the items were not edible (though still very much food related), and because this month, I didn’t get a box, but the items came in a bubble wrap bag. Great idea, and it should save a bit in postage. Of course, I have popped all the bubbles saved the bag for another  occasion. Ahem!

Ruth sent me some really cool things. Not least of which were these cute little Tabasco bottles. They stand about 3 cm tall, but of course, they punch far above their weight in the flavour department. Tabasco with cheese on toast is A Thing, you know.

This is a lovely little sweet treat. Apparently, they are called Bee Bars because Rococo uses a bee pattern on their chocolate moulds. I am an inveterate nibbler of chocolate, and can happily make a bar last a month. Much to the Big Guy’s consternation. He feels that chocolate should be consumed all at once. I have hidden this, so I can nibble in peace.

I received some healthy snacks. I think that Ruth has been reading my latest efforts to eat better, but with lower calories. These Seaweed thins fit the bill perfectly, especially for those times when you know that only a salty snack will do.

In keeping with the healthy theme, I also got some fruit leather and flavoured raisins. I suppose that these are the same as soaking rum in raisins, or similar. I am looking forward to adding the pineapple raisins to my next batch of muesli. I think the orange ones will go well in mince pies and has given me an idea for a slightly different mincemeat, so I may do a little bit of experimenting, so that I have some ready for my annual mince pie and mulled wine party.

Last, but not least, I also got some cake sparklers, and a packet of Christmas stencils, both of which will also be a big hit at the mince pie party. And this lovely little gingerbread spatula. It is traditional at this time of year to make parkin, especially for Bonfire Night. We don’t get a Bonfire Night over here, but there is definitely something about autumn that makes you crave ginger and warmer spices. I have a parkin in a tin, developing that lovely sticky richness. Now I am inspired to make some ginger bread biscuits too.

Seedy Cuttings And A Bonus Box

Well, another month has flown by, and it is the time that we should be giving you the opportunity to link up any blog updates that you may have. If you have a post that you would like to add to the mix, then please do feel free to use the linky below.

I have been watching the hashtag #SeedyPenpals on Twitter, and have enjoyed reading some of the tweets that you have sent to and fro about your plants and seeds etc. I thought that I would do a little bit of a round up of some of the things that I have seen around (seeing as this is a not-at-all-hastily-put-together post. Honest). I will also do a bit of blog hop of my own to see what else I can pick up, and I’ll add any #SeedyPenpals tweets here while I look for a better way to capture them.

For me, the most joy from Seedy Penpals has not been the setting up of the scheme, or the swap, discovering new seeds, or even planting them. Although these things have all been a lot of fun, and have brought me a lot of joy. Still, the thing that I have enjoyed most is all of the little things that neither Carl nor I foresaw when we set up the scheme.

On Twitter I saw that a couple of people who just missed out on the first round had organised themselves into their own private swap. I love this, I am glad that neither of them had to miss out on the fun, and I hope that they will both join all of us in the early spring. I’m also pleased that people think it’s a good enough idea to do their own.

I have seen Carl share loads of things with other Seedy Penpals, including keffir as well as other boxes of goodies, and the usual help and advice. Of course, I am sure that he would have done this anyway; he is a very generous man who is always willing to help out. But I probably wouldn’t have seen them share, or know that people have been busy sending him things too.

And this is the thing, I have seen some old friends sharing, and I have watched new friendships blossom. And this is where the most joy has come for me. Watching these interactions, and seeing the friendships grow, even if the seeds haven’t all been planted. You are a pretty generous lot in the main, and I love to see it.

This is not to say that the seeds have not been growing. Mine have sprung to life, I’m just hoping that the frost doesn’t get them before I get home. Michelle at Veg Plotting has also updated me to say that the fennel that she was sent have done well. Although she planted them a little late to produce big fat bulbs, she has been enjoying the herby fronds in her salads. She has them under cover for the winter now, so I hope there is still quite a bit of mileage in them yet. Have you seen any progress? Let us know in the comments.

I got loads of her favourite things, like the semolina/ jelly style desserts, the butter chicken, the sardine paste and the Reese’s pieces. She also sent me some things from her travels – the curry leaf powder, popadoms, the savoury oatmeal (yes, savoury, I am fascinated), chilli popcorn (unpopped) and a small bottle of biryani. It is fragrant with cloves, and has really got me thinking what I can use it with. It scented the box beautifully.

There was also some more nougat and exquisite Turkish delight. Unfortunately I scoffed most of it forgot to take photos of that, but it has inspired me to have a go at my own. I often have egg whites knocking about, due to my custard habit, and I can feel experiments in foraged fruits coming on too.

Green Bean Chutney: A Taste of My Childhood

From One Generation to the Next

Every year I grow runner beans in my garden. I don’t know what variety they are, they were originally given to me by my father from seed that he saved from his garden. I have never bought runner beans, and subsequent generations of dad’s seeds have grown successfully across four different gardens/climates and in two different countries.

We always had runner beans, fresh from the garden, throughout the summer and early autumn months. I used to take them for granted, since they always came, no matter what the weather or growing conditions that year.

After I moved out of home, I only really got runner beans if I was visiting my parents. Back then, I tended to shop in supermarkets, and runner beans were not a popular supermarket choice, maybe because it is hard to get them to be completely uniform, like the Stepford style apples and tomatoes that they prefer to sell.

When I first started to get a veg box, I got some runners, to my delight. Just like Mum used to, I settled in to string and slice them. I was jolted by a powerful memory of Mum doing this, often in front of Last of the Summer Wine on a Sunday evening.

When large amounts of beans were being prepared, I always got a bit excited, because I knew that the next day she would make Green Bean Chutney.

Just as my Dad always grew our vegetables, Mum always made a lot of our food from scratch. Chutneys, pickles and jams were no exception. In fact, I didn’t have factory produced jam until I left home; and frankly, I found it wanting.

I have always loved Green Bean Chutney. I used to have it every day at school, and all of the other kids would say stuff like “eurgh, that’s gross” and “Why do you always have that yellow stuff in your sandwiches?”. I would smile at them, safe in the knowledge that they didn’t know what they were missing, and if they didn’t want to try any, then Mum would be less tempted to give some away.

Now I am older, I make Green Bean Chutney for myself. The Big Guy is a total convert as well.

As you may have seen, I am a bit of a preserving addict, so I am always giving them as gifts to friends and relatives. Despite the fact that we grow extra runner beans, so that we can make this chutney, the Big Guy still severely rations the Green Bean, in order to keep more for himself.

If I am honest, I am a little loathe to give it away, too!

So, I thought that I would share the recipe for Green Bean Chutney with you, in the hope that you can make it for yourselves, and I get to keep all of the jars that I make!

So, here is my Mum’s Green Bean Chutney. She gave it to me, but I am not really sure where she got it from originally. Maybe she can let you know, by leaving her first ever blog comment – over to you Mum?

You can  also use French Beans in this recipe, or a mixture of both French and Runners. Next year, thanks to my Seedy Penpal, Charlotte, I am going to grow a few yard long beans too, so I shall be experimenting with those as well.

My bean harvest was a little late getting going this year, but hopefully you will still be able to find some beans to try it yourself.

Green Bean Chutney, Cheese and Crackers

Recipe: Green Bean Chutney

Ingredients

I have converted this recipe from imperial to metric

3-4 jam jars

700 g runner beans (or French or other green beans, or a mixture)

1 kg  onions

Cold water to cover

1 dstsp salt

350 g demerara sugar

600 ml malt vinegar (I can;t get malt vinegar over here, so I use 500 ml white wine vinegar and 100 ml balsamic)

1 dstsp turmeric

1 dstsp powdered English mustard

1 tbsp cornflour

Method

Sterilise the jam jars in a dishwasher, or wash them in hot water, dry them and leave them in a low oven while you make the chutney. Either way, they will need to be hot when you put the chutney in it.

String and slice the beans (or use a stringless variety), making sure that they are roughly the same size – this is especially important if you use a mix of bean varieties.

Peel and thinly slice the onions. Add them to a preserving pan (or a heavy-bottomed stainless steel pan) with the beans, cover them in water, and add the salt. Cook for about 10 minutes, or until tender.

Strain the water, and return the vegetables to the pan. Add half of the vinegar and the sugar. Cook for a further 10 minutes.

Mix together the cornflour, spices and the rest of the vinegar, and mix to make sure there are no lumps. Pour this into the pan, with the vegetables.

Bring the chutney back up to the boil, and hold it there for a few minutes, until the mixture thickens. You need some liquid though, because this will stop it drying out in the jars.

Fill the hot jars with the chutney. Then distribute the liquid between the jars, so that they are full to about 3 mm from the top.

Put a wax disc, wax side down, over the chutney, and seal it with cellophane. Don’t use a lid, the vinegar will corrode the metal, and may leave you exposed to some nasty microbial activity.

Don’t discard any excess liquid, it is great in salad dressings.

You need to leave the chutney for a week to allow it to meld and mellow.

This is a brilliant accompaniment to cheese, cold meats, salads, and is a particular marvel with jacket potatoes, and bubble and squeak.

Red Lettuce Day

Thai Chicken, Mango and Noodle Salad

A spicy salad with a difference

Once a week, I volunteer at an Urbania Hoeve permaculture garden. It is great fun, and I am learning a lot. Another bonus is that I have been able to experience a number of different vegetables, as well as save the seeds from them to try them in my own garden.

As you can see from the salad photo, I have used nasturtium (leaves and flowers) in this salad. This is not new to me, I’ve been eating nasturtium for as long as I have been growing them.

Despite having called this post Red Lettuce Day, the two plants that I would like to talk about aren’t actually lettuces, but they are red, and plants that were new to me this year.

The first is Perilla, or Shiso (Perilla frutescens). Although I wasn’t aware of it, I have been looking for this plant since I went to Japan for work, and wanted to have a go at growing the fragrant leaf that you find in many of their broths and ramen. They translate it as morning glory, which I was very disappointed to find isn’t edible, after I had found and started to grow it.  Following a bit of a twitter storm earlier in the year, I found and grew the green version of this, and have been eating the red version from the permaculture garden.

I really love perilla in salads. It has a distinctive perfumed flavour, with a slight aniseed kick. It is a pretty strong herb, so you don’t need a lot of this to provide you with a lot of flavour. It is also good in broths and gravies, and is used a lot in pickles in Japanese cookery.

Orache (Atriplex hortensis) also comes in red and green varieties. You may be able to find the green version in the wild over here. In other temperate zones, it is possible to find it, but it is more likely to be a garden escapee. Like most wild greens, orache tastes very irony. It can be used anywhere that you would use spinach, raw or cooked. I have some seed saved, so I hope that I can grow some here too next year.

Both seem relatively easy to grow, but they need sun, so I can only grow them in a small part of my shady garden. I don’t mind, I’m looking to use them as part of a large mix in the suitable beds anyway, and I think they’ll be fine. I hope that more people will give them a go, I can recommend them.

This is an entry for the 52 Week Salad Challenge, where there has already been much discussion about red and green lettuces, and their attractiveness to slugs. I am not sure if these plants are particularly attractive to slugs in any case, but they are certainly both very tasty in my opinion!

I made up a Thai chicken and mango salad with my haul from the permaculture garden, and I used fresh coconut, which has just hit the markets around here.  I give the recipe below, but this is really easy to tweak if you don’t have your own permaculture garden to play in, or if you want a veggie version or whatever.

For example, you can substitute Thai (AKA holy basil) or even ordinary basil for the perilla; you can swap out the orache for spinach;  you can use cooked chicken without the marinade; or you can even leave it out if you would like. If you don’t have fresh coconut, use coconut flakes. It’s pretty versatile. The key components are really the dressing and the mango, with some contrasting salad flavours and crunch. Whatever salad leaves you choose will need to be robust enough to stand their own against the other strong flavours.

As always, this recipe serves 2 people, but is easily scalable.

Recipe: Thai Chicken and Mango Salad

Ingredients

If using uncooked chicken:

4 chicken thighs, boned

3 tbsp oyster sauce

2 cloves garlic, crushed to a fine paste

5 cm knob of fresh ginger

½ tbsp light soft brown sugar (lichtbastaard suiker)

pinch chilli powder

If using cooked chicken: 

200 g cooked chicken, cut into bite sized chunks

For the salad:

200 g rice vermicelli noodles

150 g fresh or flaked coconut, cut in thin strips

50 g raw cashews, roughly chopped

1 mango (it can be green or ripe), diced

1 red pepper, diced

½ cucumber. diced

2 spring onions, finely sliced

200 g beansprouts, or other sprouted seeds

10-15 red perilla leaves

Bunch of red orache leaves

Bunch of nasturtium leaves

For the dressing:

3 tbsp fish sauce (optional)

1 tbsp soy sauce

Juice and zest of 1 lime

½ fresh red chilli, deseeded and finely diced, or a pinch of dried chilli flakes

Small amount of brown sugar to taste

Nasturtium flower to garnish (optional)

Method

If you are using uncooked chicken, cut down the thighs so that they are one flat piece. Mix together the marinade ingredients and coat the chicken pieces on all sides.

Roast off in a moderate oven (about 180°C) until the chicken is just cooked. Baste it with the marinade at points throughout the cooking time. Remove from the oven, and set aside

Cook the noodles according to the packet instructions, drain, and plunge into cold water, to stop them overcooking. Drain again.

Mix up the dressing, and add to the noodles.

Dry fry the coconut, until brown and toasted. Remove from the pan, then toast the nuts in the same way.

Toss together all the salad ingredients, except the leaves, and add to the noodles. Mix well.

If you are using the marinated chicken, cut it up into bite sized dice.

Toss the chicken and the leaves through the salad. Top each one with a nasturtium flower, and serve immediately.

This makes a filling and unusually tasty salad. Perfect as an evening meal.

I have just got back from the UK, where I was attending my sister’s wedding.  She and her groom did a lovely job, with the help from friends and family. A great time was had by all, and the weather mostly held off. Congratulations to my sister and her new husband!

I also managed to fit in a little bit of a forage, between the wedding day and the train home. I found some blackberries, at last. This year has been terrible here, probably because of the lack of pollinators. I got enough for a couple of good crumbles, or maybe even a pie. I also got a sizeable amount of rowan berries, which I am experimenting with. I will bring you the recipe shortly.

I found these little beauties. I wasn’t looking for them, in fact I was busy with other things, but once you start to forage, spotting things in fields and hedgerows becomes like second nature. You can’t help but investigate, which often leads to thinking up ways to use your finds.

As Shaggy Ink Caps do not keep well at all, I quickly made them into a tasty little soup. It was really delicious, as they have a nice nutty, mushroomy taste. I did not get pictures, because (as the name suggests) it was a grey/black colour, not unlike food containing squid ink. I think that adding wilted and chopped spinach would help to make the dish look more appetising, if you are averse to odd-coloured food. Don’t let the colour put you off, the soup is definitely worth it.

I have given the recipe below, in case you come across any for yourself.

WARNING: It is very easy to confuse the Shaggy Ink Cap with the Common Ink Cap. Both are edible, but the Common Ink Cap will poison you if you eat it with alcohol.There have been no reported fatalities from this kind of poisoning, but the symptoms can be uncomfortable.  In fact, alcohol is best avoided for at least the next day too, to be on the safe side.  Please also stick to Basic Fungus Foraging Rules when picking mushrooms.

Common Ink Cap Mushrooms – not to be taken with alcohol

This soup was enough for 2 people, and will freeze well before the cream is added.

Recipe: Shaggy Ink Cap Soup

Ingredients

6 young Shaggy Ink Cap mushrooms (before they flatten out and look black and kind of slimy)

1 tbsp olive oil

Small knob of butter (optional)

1 medium onion

1 fat garlic clove

400 ml chicken or vegetable stock

100 ml cream (or milk would probably do)

Small bunch parsley, finely chopped

Leftover pasta to thicken (optional)

Method

Chop the onion, and roughly chop the garlic, and sweat them off in some olive oil, until translucent.

Roughly chop the caps of the mushrooms, and chop the stalks reasonably finely. Add to the onion and garlic, and add the butter. Season well with salt and pepper, and fry off. This stage may take a while, as you want to try to drive off the black moisture that will seep from the mushrooms.

At this point I added the pasta, to give a bit of bulk. You could also add leftover rice, or cooked potato. You could probably also add raw potato when you sweat the onion. Or leave out the starch altogether. I mainly added it because it was in the fridge.

Add warm stock, and the chopped stalks of the parsley. Bring to the boil, then simmer for 5-10 minutes.

Blitz in a food processor, or with a stick blender until it is as smooth as you like your soup. I don’t like it completely smooth, so I don’t do this as long as I could if I liked a more homogenous texture.

Return to a pan, and add the cream and the chopped parsley leaves. Warm, but do not boil. Taste for seasoning, and serve.

You can also add a swirl of cream in the bowl if you want it to look a bit more fancy, but really, how fancy can a kind of grey/black soup get?
